Southern Style Baked Fish

Cooking Instructions
Ingredients:
- Gedera & Co. Baked Fish Kit
- 800g fresh tuna or salmon*
- 3 to 4 tbsp. of olive oil
*Note — For this dish, fresh tuna or salmon are traditionally used, but ling or Spanish mackerel will also work.
Method:
1. Preheat the oven to 180C.
2. Cut the fish into 4 cm. chunks.
3.Empty the Spice Blend Pouch in a small bowl and mix with olive oil.
4. Coat the fish chunks with the spice and oil mixture; making sure they are evenly coated. Set aside for 15 minutes to marinade.
5. Place the fish chunks on a baking tray and bake for 25 minutes. Turn them gently once during the baking process.
6. Serve with warm rice, Coconut Sambol and Lentil Curry.
Note: Pandan leaves are edible but they are tough and fibrous. They add an amazing aroma but are not pleasant to eat. Please remove them before enjoying the dish.
